Tangy, fresh, and with a slightly different flavor profile than my usual homemade salsa, it was a delicious surprise. Before trying his version, I had never used tomatillos in my cooking—but now, they’re a staple.

Tomatillo Salsa

  • 1 Food Processor or Blender

Ingredients
  

  • 3 Medium Tomatillos
  • 1 Small Roma Tomato
  • ½ Red Onion
  • ¼ - ½ Cilantro chopped
  • 1 Jalapeno Pepper seeded & chopped
  • 1 Lime juiced
  • 2-4 Cloves Fresh Garlic minced
  • ½ tsp. Salt
  • ½ tsp. Ground Cumin
  • ¼ Tsp. Cracked Black Pepper

Instructions
 

  • Roughly chop the tomatillos, the roma tomto, red onion, cilantro, and garlic, then add them to the food processor. If using a blender, be careful not to over-process the salsa or risk turning it into a sauce instead of a chunky salsa.
  • For a milder salsa, slice the jalapeño, removing seeds and membrane, then roughly chop and add it in.
  • Slice and juice the lime directly into the food processor.
  • Add salt, cumin, and pepper to the food processor. Close the lid and pulse 5-7 seconds, repeating three to four times until you reach your desired consistency.
  • Taste the salsa and adjust the seasoning as desired. Serve with crunchy chips and enjoy!
