Mango & Sticky Rice
Thai cuisine is easily one of my favorites, and while I typically lean toward savory dishes, Mango Sticky Rice is an exception I can’t resist. This classic Thai dessert combines sweet, fragrant, coconut-infused sticky rice with juicy mango for the perfect balance of flavors. I originally found a fantastic Instant Pot version from Amy + Jacky. I plate it differently and skip the toasted coconut flakes (see my notes below). While I love coconut milk in curries and this dish, ironically, I don’t actually like coconut itself!

Recipe Steps
I discovered Amy + Jacky’s website when I was first learning to use my Instant Pot, and their detailed instructions, photos, and videos were incredibly helpful. Every recipe I’ve tried from them has been fantastic, and this Mango Sticky Rice is no exception.
This recipe involves cooking glutinous rice in the Instant Pot and then soaking it in a sweet coconut milk mixture for 30-60 minutes. I like to start the dessert while making dinner, allowing the second soak to happen while we eat. Keeping the rice warm in the Instant Pot’s “Keep Warm” mode ensures a warm, comforting texture when served. For the best flavor, enjoy this dish when mangos are in season!
