Chicken & Purple Onion
This Chicken & Purple Onion recipe was the first “fancy” dish a friend taught me, and it quickly became a favorite! With tender, well-seasoned chicken resting on sweet roasted onion rounds and topped with creamy dressing and melted parmesan, it’s flavorful yet surprisingly easy to make.
Recipe Steps
Over twenty years ago, a friend invited us and another couple over for dinner, treating us to this delicious, impressive meal. When she revealed how quick and easy it was to make, I was thrilled I could recreate it! The dressing adds richness (use creamy Parmesan, Caesar, or ranch), while a hint of cayenne and garlic powder rounds out the flavor without adding heat. Best of all, it’s quick enough for a busy weeknight and has earned a solid stamp of approval from the kids!”
The most challenging part of this dish is fileting the chicken breasts.
**Pro Tip:** Be sure to use a sharp knife.
Place the chicken breast on your cutting board, then place your non-dominant hand flat on top of the breast. Holding a sharp knife in your dominant hand, slice horizontally through the middle of the chicken breast in a smooth, even motion.
For this recipe, feel free to adjust the amount of dressing and cheese to your taste. Enjoy!
