If you’ve never tried making falafel at home, you’re in for a treat! These air-fried falafel are crispy on the outside, tender on the inside, and packed with bold, savory flavors. With a handful of simple ingredients and no deep frying required, this recipe is healthier and just as delicious as your favorite takeout. Whether you’re filling a warm pita or topping a salad, homemade falafel is a versatile and satisfying dish that everyone will love.

Recipe Steps

This recipe can be made with canned garbanzo beans, but it’s even better with freshly cooked garbanzo beans made from scratch. I follow the steps in my fresh hummus recipe to cook the beans. Once they’re ready, it’s just a matter of processing the ingredients, forming the falafel, and air-frying them to perfection.

While this is a straightforward recipe, it does take a little time. I can air fry about 20 falafel at a time, so when I make them, I like to double the batch and freeze the extras for quick meals later.

Pro Tip: If the falafel mixture isn’t holding together, add another teaspoon of garbanzo flour to help bind it.

These falafel develop a lovely crispness, but they do need to be handled gently to avoid crumbling.

I love enjoying my falafel in a pita pocket! I start with a layer of Jerusalem Salad and Homemade Hummus at the bottom, add four falafel balls, and top it off with homemade tahini and Middle Eastern hot sauce. Prefer to skip the carbs? Simply pile everything (minus the pita) onto a bed of greens for a delicious and satisfying meal!

  • 1 Food Processor

Ingredients
  

  • 3 C cooked garbanzo beans (or canned)
  • Tbsp. garbanzo flour
  • 1 onion diced
  • 2 cloves garlic minced
  • ¾ C fresh flat-leaf parsley chopped
  • ½ C fresh cilantro chopped
  • 2 tsp. cumin
  • 2 tsp. ground corriander
  • 1 tsp. fresh cracked pepper
  • ½ tsp. cayenne pepper
  • tsp. salt

Instructions
 

  • Place the falafel ingredients into a food processor in batches and pulse a few times for 15 seconds each, just until minced and combined. Do not overprocess—the mixture should be coarse, not a paste. Transfer each batch to a large bowl and repeat until all ingredients are processed.
  • Stir the mixture in the bowl to ensure all ingredients are evenly combined.
  • Using a 3-tablespoon scoop or melon baller, scoop and pack the falafel mixture. Release the ball into your hands and gently form it into a compact ball. Place the ball in a greased air fryer basket, ensuring the falafel balls are not touching. Repeat until the basket is full.
  • Air fry at 380℉ for 25 minutes, gently flipping the falafel at the 19-minute mark.
  • Continue scooping, forming, and air frying until all the falafel mixture is used.
  • Serve the falafel in warm pita bread with hummus, tahini sauce, lettuce, and tomato. Enjoy!
