This Curry Chicken Salad is a delicious way to transform leftover chicken into something special. Inspired by a meal kit service I loved years ago, this recipe combines the savory warmth of curry and turmeric with the sweet touch of raisins and a hint of lemon. It’s perfect for sandwiches, crackers, or even on its own!

Recipe Steps

Back in the early 2000s, when I was a busy full-time working mom, I discovered a self-serve meal kit service in the area. Each week, they offered 10-12 different menu items to choose from. My friend, Fran, and I would head over, and in about 60-75 minutes, we’d assemble 7 or 8 meals using their pre-prepped ingredients and portioned proteins, packing everything into zip-top bags. We’d leave with a week’s worth of meals and easy cooking instructions.

One of the recipes I fell in love with was their curry chicken salad. I had never tasted anything like it before, and it quickly became a favorite for Brian and me. When the service closed, I was disappointed because I didn’t have the actual recipe. A few years ago, I decided to recreate it from memory. I remembered it included lemon and raisins, so I started with a traditional chicken salad base and added curry powder and turmeric.

This curry chicken salad has become one of our favorite ways to use leftover chicken. We especially enjoy it for lunch on a buttery croissant or even serve as an appetizer on club crackers—their flavor pairs perfectly with the savory-sweet curry blend.

Curry Chicken Salad

Ingredients
  

  • 1 lb. Organic Chicken cooked & diced
  • 3 stalks Celery chopped
  • ½ Onion chopped
  • ⅙-½ C Raisins
  • 2 tsp. Curry Powder
  • ½ tsp. Turmeric Powder
  • 2 Tbsp. Lemon Juice
  • 1 tsp. Pepper
  • Sea Salt to taste
  • 3 Sprigs Fresh Parsley optional (chopped for garnish)

Instructions
 

  • Chop chicken, celery, and onion and place in a mixing bowl.
  • Add to the bowl mayonnaise, raisins, curry powder, turmeric powder, lemon juice, salt, and pepper. Stir until well combined.
  • Serve in a lettuce wrap, on a croissant, or club crackers, and enjoy!
