Over twenty years ago, a friend invited us and another couple over for dinner, treating us to this delicious, impressive meal. When she revealed how quick and easy it was to make, I was thrilled I could recreate it! The dressing adds richness (use creamy Parmesan, Caesar, or ranch), while a hint of cayenne and garlic powder rounds out the flavor without adding heat. Best of all, it’s quick enough for a busy weeknight and has earned a solid stamp of approval from the kids!”

Place the chicken breast on your cutting board, then place your non-dominant hand flat on top of the breast. Holding a sharp knife in your dominant hand, slice horizontally through the middle of the chicken breast in a smooth, even motion.

Ingredients
  

  • 2 Chicken Breasts fileted into thin slices
  • 2 large Purple Onions
  • 4-5 Tbs.p Organic Light Caesar (or Ranch) Dressing
  • 6 oz. Grated Parmesan cheese
  • ¼ tsp. Pepper
  • ½ tsp. Salt
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1 Bunch Fresh Italian Flat-Leaf `Parsley chopped
  • ¼ tsp. Cayenne Pepper optional

Instructions
 

  • Preheat your oven to 425℉ and line a baking sheet with parchment paper.

  • Filet each chicken breast to create four thin slices.
  • In a small bowl, mix the cayenne pepper, garlic powder, onion powder, salt, and black pepper. Season both sides of each chicken slice with the spice blend.
  • Place each seasoned chicken slice on top of an onion pair. If the chicken extends beyond the onions, add an extra slice of onion underneath.
  • Spoon 1 tablespoon of your chosen creamy dressing over each chicken slice.
  • Sprinkle 2-3 pinches of chopped parsley and 1 Tbsp. grated Parmesan cheese over each chicken breast.
  • Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165℉.
