In July I bought 24 lbs. of fresh Georgia peaches. I won’t bore you with the whole story, but suffice it to say, I had more peaches than I knew what to do with. I’ve always loved the sweet-savory combination of fruit with pork, and the peaches pair beautifully in this Pork Chop with Fresh Peaches and Basil recipe.
The chili flakes provide a nice touch of heat to complement the sweetness. The fresh basil came straight from my husband’s herb garden. While I deviated from the original by not serving it with spinach, everyone still enjoyed the dish. We can’t wait for peach season to have pork chops and fresh peaches again.
